Liberian foods are considered heavy by many because they are heavily seasoned. Many of the dishes are a combination of meats, fish, and vegetables to be served as one meal, combined to make sure a well balanced meal is eaten daily. The oil used by most Liberians is palm oil, which has a high vitamin content, and most of the ingredients can be found in the African market in your city.

Written as a guide for his many friends in the United States, Samuel Kolleh hopes this Collection of Liberian Dishes will add some variety to your family table. He includes a basic introduction to preparing and using the kitchen equipment. In addition to step-by-step instructions, many of the recipes are beautifully illustrated in color.

ABOUT THE AUTHOR

When he migrated to Monrovia, the capital of Liberia, in the early 1960s from Palakwele, Loffa County, Samuel Kolleh, Sr. lived with late Lieutenant and Mrs. Charles Really, and the rule of the house was the boys do all the cooking; that is where he learned most of his cooking habits.

He completed most of his education in Liberia, and he met and married Eliza W. Kolleh in 1974. They have four children and five grandchildren. He worked for over thirteen years as a vocational instructor in Grand Bassa and Nimba counties. He retired and returned to Monrovia as a private businessman, but he came to Philadelphia in 1990 to escape the civil war. He received a master’s degree in human service in 2000 and currently works as a program specialist with Elwyne, Inc.
